Happy Spring to you all! With the promise of warm days ahead, I thought I’d share one of my favorite fitness recipes with you – Sweet Stuffed Acorn Squash, which I love serving whenever I’m in the mood for a light and healthy lunch! The tastes are sweet and subtle – in distinct contrast to Prince Charming’s Savory Stuffed Acorn Squash, which was recently featured at Create With Joy!
Try them both and let me now which one you prefer! This recipe was inspired by and adapted from the Better Homes and Gardens New Dieter’s Cook Book.
Ingredients
3 Acorn Squash, Halved, Seeds Removed
1 to 1 ¼ Pounds Ground Turkey
½ Cups Celery, Finely Chopped
½ Cups Onions, Finely Chopped
2 Tablespoons Olive Oil
1 Cup Applesauce
2 Teaspoons Curry Powder
¼ Cup Golden Raisins (Optional)
1 Tablespoon Ground Cinnamon
Instructions – Acorn Squash
1. Grease or spray a baking sheet.
2. Place the acorn squash face down.
3. Bake at 350 degrees, until tender, for approximately 50 minutes.
Instructions – Sweet Stuffing
1. Brown the ground turkey in a large skillet or wok. Remove from the pan and set aside.
2. In the same pan, add 2 tablespoons of olive oil to the remnants of the turkey liquid and sauté the onions and celery until they are tender and the onions are translucent.
3. Add the ground turkey to the cooked vegetables, stirring to combine thoroughly.
4. Add 2 teaspoons of curry powder, stirring to combine.
5. Add 1 cup of applesauce, stirring to combine. Bring to a slow boil.
6. Add 1 tablespoon of ground cinnamon, stirring to combine.
7. Add ¼ cup of golden raisins and simmer for 3-4 minutes, stirring constantly. Remove from heat.
Serving Instructions
Fill the cavity of each halved acorn squash and serve hot.

Dear Krafty Kat,
I believe that the original recipe was approximately 300 calories. Even within that recipe, there were options that would affect the exact calorie count (for instance, you could use ground turkey or ground pork, include or exclude the raisins, etc) – but hopefully that will give you an idea!
