Blueberry Buckle |
Each day, I look forward to visiting a few of my favorite foodie friends, as well as finding new blogs to explore as I hop through the weekly blog parties. I am always amazed by the endless array of nutritious meals, delicious desserts, and inspiring ideas these sites provide!
I discovered today’s recipe through one of my favorite culinary blog hops, Foodie Friday. The source is the talented NancyCreative, and her original recipe is posted here. I’ve made a few modifications to Nancy’s original recipe – mainly based on what was on hand the day the craving for blueberries struck – and I’ve noted the changes below. I hope you give this a try – the baked buckle was so delicious, Prince Charming wants more, this time filled with his favorite fruits!
Batter Ingredients:
½ Cup Butter, Softened
1 ½ Cups Sugar
2 Eggs
1 ½ Teaspoons Vanilla
4 Cups All Purpose Flour
4 Teaspoons Baking Powder
½ Teaspoons Salt
1 Cup Half and Half
4 Cups Fresh Blueberries
Brown Sugar Topping Ingredients:
1 1/3 Cup Light Brown Sugar, Packed
¾ Cup All Purpose Flour
1 ½ Teaspoons Ground Cinnamon
2/3 Cup Cold Butter
Ingredient Substitution Notes:
Based on what was on hand the day we made the recipe, we substituted Bread Flour for All Purpose Flour and Frozen Blueberries for Fresh Blueberries. These changes resulted in an increased baking time over Nancy’s original recipe (the frozen blueberries added extra liquid to the recipe), but the outcome was just as delicious!
Instructions:
Preparation:
1. Preheat oven to 350 degrees.
2. Grease a 9×13-inch pan and set aside.
To Make The Batter:
3. In a large bowl, cream the butter and sugar.

5. In a medium bowl, combine the flour, baking powder, and salt.

7. Fold in the blueberries.

To Make The Brown Sugar Topping:
9. Combine the brown sugar, flour, and cinnamon in a medium bowl.
10. Cut in the butter until its crumbly.

11. Sprinkle this mixture over the batter in the pan. This may seem like a lot of topping, but use it all so you’ll have a nice thick brown sugar crust.

Baking Instructions:
12. If you use fresh blueberries, bake at 350 degrees for 60-70 minutes, or until a knife inserted in the center comes out clean.
If you use frozen blueberries, bake at 350 degrees for 90 minutes, or until a knife inserted in the center comes out clean.
13. Cool on a wire rack before cutting into squares.

When you remove the baked buckle from the oven, you will see that the top has a buckled effect – hence, the name, Blueberry Buckle!
