Guinness Brownies

Are you looking for a moist and chewy brownie with a rich, dark chocolate taste? If so, I invite you to whip up a batch of Guinness Brownies!

I normally don’t cook with beer, but this month, I stepped outside of my comfort zone and incorporated this secret ingredient into my recipe as part of the Get Your Chef On Cooking Challenge, hosted by Jen from Four Marrs and One Venus and Julie from White Lights On Wednesday.

I incorporated Guinness – a stout beer – into this recipe because the rich flavor found in stouts complements chocolate, making it a popular choice for dessert recipes.

Legend - What Is This

If you prefer dark chocolate to milk chocolate – and less sugary tasting desserts to overly sweet ones – give this recipe a try. Since I could still taste the stout flavor immediately after baking, I preferred letting the flavors settle in for a day or so before eating – then I enjoyed serving brownies warm. Sprinkled with powdered sugar, they make a beautiful presentation!

Guinness Brownies Recipe

Ingredients

1 Cup Whole Wheat Pastry Flour*
3/4 Cup Unsweetened Cocoa Powder
1/4 Teaspoon Salt
5 Tbsp. Unsalted Butter, Cut Into Cubes
8 Oz. Dark Bittersweet Chocolate Bar(s), Chopped
3/4 Cup Milk Chocolate Chips
4 Large Eggs, At Room Temperature
1 Cup Natural Cane Sugar
1 1/4 Cups Guinness Extra Stout Beer, Room Temperature, No Foam
1 Cup Semi-Sweet Chocolate Chips
1/8 Cup Powdered Sugar For Dusting

*Note: If you don’t have Whole Wheat Pastry Flour on hand, use this substitution:

Pastry Flour = 1/3 Cup Cake Flour Plus 2/3 Cups All Purpose Flour

Instructions

1. Preheat the oven to 375° and grease a 9 x 13 baking pan.

2. Whisk the flour, cocoa powder and salt together.

3. Melt the chocolate bar pieces, milk chocolate and butter together until fully melted.

4. In a very big bowl, whisk the eggs and sugar together until slightly frothy. Very slowly, pour in the chocolate mixture while whisking the eggs.

5. When your chocolate mixture and your eggs are combined, whisk in the Guinness.

6. Fold in the flour mixture very slowly, making sure not to over-mix.

7. Pour the mixture into the prepared baking pan.

8. Top with the cup of semi-sweet chocolate chips.

9. Bake for 25 to 30 minutes or until a toothpick comes out clean. Remove the baking dish and let cool completely.

10. Dust with powdered sugar.

    Thanks for this. The brownies sure do look good. I’m wondering if there is an alternative to beer that might give a similar flavor? I don’t drink beer – but they do look fantastic!

      Hi Lisa,

      I did a little research and came across a few suggestions, including red wine and water, as alternatives. I’m not a beer drinker either – my husband had to purchase this for me just for the challenge!

      For the record, he purchased 2 bottles just in case we needed them, but we only ended up using 1 for the recipe. He ended up giving the 2nd bottle away to an appreciative friend!

      I don’t normally think of brownies as an elegant dessert, but I was really impressed at how lovely a contrast the dark brownies and the powdered sugar – and the “cake cut” – made! 🙂

  5. I bet the guiness makes the brownies taste really rich. I never have guinness in the house because we aren’t really dark beer drinkers…but if I ever come across a bottle I am going to give this recipe a try!

    Wow, did this recipe catch my eye! I’ve never heard of this combination before. I happen to love Guinness, it’s one of my favorites.
